Told — это вторая и третья форма глагола "tell" ("рассказывать").
I told him to close the door — Я сказал ему закрыть дверь (Я сказал, чтобы он закрыл дверь).
Said — это вторая и третья форма глагола "say" ("сказать").
He said that — Он сказал это.
Spoke — это вторая форма глагола "speak" ("говорить").
I spoke Italian — Я говорил по-итальянски.
Употребляется, собственно, по мере необходимости.
